Avocado and Chayote Salad

This is delicious and healthy.

Ingredients:
¼ cup fresh lime juice (about 2 limes)
1 tsp lime zest
2 tbsp horseradish-dijon reduced fat mayonnaise
½ tsp hot sauce
½ tsp soy sauce or fish sauce
2 avocados diced
½ chayote squash diced
1 pint cherry or grape tomatoes quartered
2 scallions chopped
½ cup cilantro minced
Boiled shrimp optional 
 
Mix all ingredients (except shrimp) together.  Serve immediately.  Optionally top with salted boiled shrimp and dot with extra hot sauce.
